We will show you

• How to prepare and make a delicious stock.
• How to spatchcock your game bird for Szechuan pheasant/partridge.
• Pheasant with Wild Mushrooms and Barley Risotto.
• Pheasant Meat Balls in a Thai Broth with Prawns, which you will have as an amuse bouche.

You will then make

• Goujons of Pheasant and Chimichurri, with and without velveting which you will eat for lunch
